green veggie curry rice



  • 2 cups rice
  • 6 large mushrooms
  • 3 large hand fulls spinach
  • 300 grams sugar snaps
  • 2 table spoons curry powder
  • 1 tablespoons Italian herbs
  • 1/2 tablespoon Kerry powder
  • 1 cup non dairy milk


  • boil a pot of water, when the water boils add the rice and cook according to the instructions on the packaging
  • cut the veggies in to pieces and saute in a large wok
  • add the herbs and the non dairy milk stir and let simmer for a few minutes
  • add the rice to the wok stir and serve
  • enjoy!
