pasta with creamy sweet potato sauce



  • 2 cups of elbows
  • 1 big sweet potato
  • 2 hands spinach
  • 250 grams kidney beans
  • 5 big carrots
  • 1/2 cup peanuts
  • 1 cup coconut milk
  • 3 garlic cloves


  • peel the sweet potato and cut in thin slices and cook in a pan with water
  • add your elbows to an pan with boiling water
  • cut up the garlic and carrots in to small pieces and add to a frying pan with a bit of oil
  • add the spinach and beans to the frying pan
  • add the boiled sweet potato, peanuts and coconut milk to a blender and blend until smooth
  • add the sauce to the frying pan and stir
  • add the elbows stir and serve
  • enjoy!
